My New Favorite Drink

After hauling dirt for a second day, I’ve gained a new appreciation for mint lemonade. It’s so refreshing and I’ll definitely be making it at home. I think I had a similar drink in India. 


We’ve been eating hearty meals here for breakfast lunch and dinner. Today’s lunch was quite tasty. Between the 3 of us it was chicken & steak fajitas, ceviche, & patacones which are basically tostones. On the way out we found something that looked like Guyanese fudge and lo and behold it was! Tasted great, it was made with nuts and I think something like a dried fruit. 


Now we are headed to a cooking class (waiting on an Uber) in the pouring rain 🌧️. It’s torrentially raining right now. after a few minutes our Uber came and we were back at Maximo 20 minutes later. We made 2 things: 

1. A mango drink

2. Picarillo chayote with a corn tortilla

The picarillo was made with choice beef and chayote is a green fruit that seems more like a vegetable in flavor and lack of sweetness. 




To end the night, 6 of us in the house took a standing-room-only bus home in bumper-to-bumper traffic in the rain. It’s been pouring just about every afternoon this week! For dinner at home our host prepared rice, beans, a delicious pork sausage and chips with homemade guacamole which was so tasty. 

I have another early morning and am feeling slightly sore in my arms from all the shoveling. Definitely looking forward to sleep… yes again! 💤
